Food artisans: Aldo Brianti
If today a lot of Italians are familiar with the marvellous hams made from the Black Pigs of Parma it is also due to the work of Aldo Brianti who has helped to save this endangered species by breding it in an almost wild manner in his organic farm San Paolo where, together with his son Luca, he produces genuine masterpieces for real connoisseurs.
