And there are some, that believe such a choice will lead necessarily to vinification shortfalls … formal smudges, “wrong” wines” if you want. Vinification with no added sulphites is a complicated and demanding path but undoubtedly feasible. In this tasting we will approach five wines with no added sulphites, toggling with original interpretations, native varieties, lost and regained denominations, and even ageing.On taste:

- White wine “Catavela” Denavolo 2012 (Emilia, Italy)
- Sparkling white wine bottle refermented “280 slm” Costadilà (Veneto, Italy)
- Monferrato bianco, “Montemarino” Cascina degli Ulivi 2005 (Piedmont, Italy)
- Vin de Pays des Cévennes “Alicia Collector’s Item” Lous Grezes 2006 (Languedoc, France)
